
There's nothing better than entering a weekend with no plans. You'll never sleep better than that Friday night knowing you have nothing to do except wake up – and that's optional, too! Better yet? The coffee is never more satisfying. And that's probably because you don't actually need it and you can sip at a leisurely pace. Ah, Saturday mornings (to bad it's Tuesday; just talking about this makes my heart ache).
To further enjoy this day of laziness, one must eat a full, fatty country breakfast while wearing pajamas. That's exactly what my husband and I do on days like this. At 11 a.m. we look around dazed and delighted that we actually slept late, despite the neighborhood dogs' best attempts to rouse us before dawn. The first place we go is straight to the coffee pot. After a large pot of freshly ground Sumatra is brewed and the life source that is caffeine has hit my veins, I get the inspiration to cook homemade something. "It's Saturday," I reason, "Even if you make a mess, you have all day – er, all weekend – to clean it up."
This weekend, I tried my hand at homemade sausage gravy to smother fresh-baked Pillsbury Home-style Biscuits.
Here's the recipe:
• 1 can of Pillsbury Home-style Biscuits (8 count)
• 1/2 pkg. mild sausage (crumbles will work, but fresh is better)
• 2 tbsp. butter (skip the margarine and use real butter for this)
• 2 tbsp. all purpose flour
• 5 cups whole milk (you can use kkim or 2 percent if you prefer)
• Salt (to taste)
• Pepper (to taste)
Break the sausage into pieces (as chunky as you like), then cook the sausage thoroughly. Pour the grease out of the pan (but not the sausage!) Next, stir in the butter and flour. Simmer for about 5 minutes on medium-low heat, stirring often. Add milk and simmer over medium heat, stirring constantly until desired thickness. Add salt and pepper to taste. Extra tip: Instead of draining all of the sausage grease, keep some or all of it to flavor the gravy. If you do this, you won't need any salt.
