
Cajun deviled eggs

Cajun Deviled Eggs
- 12 hard-boiled eggs
- 1/4 c. mayonnaise
- 1 jalapeno pepper, seeded and finely chopped
- 1 tsp. ground cumin
- 1 tbsp. prepared mustard
- 1 tsp. cayenne pepper
- 1/4 tsp. salt
- Paprika
- Snipped cilantro (optional)
Shell cooked eggs. Cut eggs lengthwise into halves. Slip out yolks and mash them with a fork. Stir in mayonnaise and next five ingredients. Fill egg whites with yolk mixture, heaping lightly. Sprinkle with paprika and garnish with cilantro if desired. Makes two dozen.
Cajun Veggie Dip
- 2 c. mayonnaise
- 2 tbsp. sugar
- 4 tbsp. vinegar
- 3 tbsp. ketchup
- 1/2 tsp. pepper
- 1/4 tsp. cayenne pepper (or to taste)
- 2 tbsp. minced onion
- 1 tbsp. garlic powder
- 1/2 tsp. oregano
- 1/2 tsp. basil
Mix all ingredients with wire whip. Chill and serve with fresh vegetables.
