Transform an everyday sandwich with flavored mayonnaise.

Zip up an ordinary sandwich with one of these flavored mayos from Aaron McCargo Jr.'s new cookbook Simply Done, Well Done (Wiley, $19.95).

Lemon Pepper -- Mix one cup mayonnaise with 2 tablespoons lemon juice, 1 tablespoon chopped garlic, 1 tablespoon chopped cilantro and 1-1/2 teaspoons lemon-pepper seasoning. 

Chipotle -- Mix one cup of mayo with 1/4 cup lemon juice, 1 tablespoon chopped parsley, 1 teaspoon minced garlic and 4 minced chipotle chile peppers in adobo sauce, then season with salt and pepper.

Dill -- Combine one cup of mayonnaise with 2 tablespoons lemon juice, 1 tablespoon chopped dill, 2 teaspoons minced shallot and 1 teaspoon lemon-pepper seasoning, then add salt and pepper to taste.

Roasted Garlic -- Mix one cup mayo with 2 tablespoons chopped roasted garlic (to roast, cut 1/2 inch off the top of a garlic bulb, wrap the bulb in foil and bake one hour at 400 degrees), 1/4 teaspoon lemon juice and 1/4 teaspoon grated lemon zest. Season with salt and pepper.
