Chipotle Mexican Grill's Spicy Guacamole (serves four)
Using a fork, mash avocado with lime juice in small bowl. Add cilantro, chopped onion, chopped garlic, Serrano chilies and salt and stir to combine.
Chipotle Mexican Grill’s Spicy Corn Salsa (serves four)
Roast the corn and Poblano chilies on a grill and let cool. Cut the corn off the cob. Dice the Poblano chilies, onion, cilantro and red jalapenos. Combine all the ingredients and season to taste.
Chipotle Mexican Grill’s Chipotle Honey Vinaigrette
Mix all ingredients in blender, adding oil slowly at the end. Can be used as a zesty salad dressing or unique meat marinade.
Ancho Chile Marinade for Meat
Soak dry chiles in water overnight or until soft. Remove seeds. Add all ingredients except meat in food processor. Puree until smooth. Spread mixture over meat and refrigerate at least one hour and up to 24 hours. Heat grill to about 400 degrees, or if cooking inside heat small amount of oil in skillet or grill pan over high heat. Salt meat to taste. Grill meat about 4 minutes per side, depending upon thickness, until done. Serve with rice, black beans, or choice of side dish. Garnish with fresh cilantro.
