Have you visited newly opened Chipotle Mexican Grill at Pleasant Ridge Town Center in west Little Rock? If you did, and fell in love with the food, try your hand at re-creating it with help from these Chipotle recipes.

Chipotle Mexican Grill's Spicy Guacamole (serves four)

  • 2 large avocados
  • Juice from ½ a lime
  • 1 heaping tablespoon (a pinch or two) of cilantro
  • ¼ of small onion, finely chopped
  • 2 large garlic cloves, finely chopped
  • 2 Serrano chilies, seeded and chopped
  • ½ teaspoon salt

Using a fork, mash avocado with lime juice in small bowl. Add cilantro, chopped onion, chopped garlic, Serrano chilies and salt and stir to combine.

Chipotle Mexican Grill’s Spicy Corn Salsa (serves four)

  • 6 ears sweet yellow corn
  • 2 Poblano chilies
  • ½ red onion
  • 2 red jalapenos
  • 1/3 C. chopped cilantro
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Roast the corn and Poblano chilies on a grill and let cool. Cut the corn off the cob. Dice the Poblano chilies, onion, cilantro and red jalapenos. Combine all the ingredients and season to taste.

Chipotle Mexican Grill’s Chipotle Honey Vinaigrette

  • ½ cup red wine vinegar
  • 1/3 cup honey
  • 1 tablespoon adobo
  • 2 tablespoons kosher salt
  • 1 teaspoon pepper
  • 1 tablespoon freshly chopped oregano
  • 1 ½ cups olive oil

Mix all ingredients in blender, adding oil slowly at the end. Can be used as a zesty salad dressing or unique meat marinade.

Ancho Chile Marinade for Meat

  • 1 pkg. (2 oz.) dried ancho chiles or dried pepper of choice
  • 1 tsp. black pepper
  • 2 tsp. cumin powder
  • 2 tablespoons fresh oregano, chopped
  • 6 cloves garlic
  • 1/2 red onion, quartered
  • 1/4 cup vegetable oil
  • 4 cuts of meat of choice

Soak dry chiles in water overnight or until soft. Remove seeds. Add all ingredients except meat in food processor. Puree until smooth. Spread mixture over meat and refrigerate at least one hour and up to 24 hours. Heat grill to about 400 degrees, or if cooking inside heat small amount of oil in skillet or grill pan over high heat. Salt meat to taste. Grill meat about 4 minutes per side, depending upon thickness, until done. Serve with rice, black beans, or choice of side dish. Garnish with fresh cilantro.
